Premium

Tasting Notes

Premium beer is light in body, with low malt flavor and aroma. Hop bitterness is low to medium, but it is usually just above the taste threshold, with hop flavor and aroma barely detectable. Color is very pale to deep gold. Original gravities also tend to be higher than standard beers. Many Canadian, Australian, Mexican, and U.S. lagers fall into this category. Esters or diacetyl are not desirable in these beers.

Ingredients

Premium beers are usually brewed with a smaller proportion of adjuncts than American standard (25 to 30% as opposed to 60 to 65%). Sometimes two-row malt is used to supplement American six-row, and some brewers even use two-row malt exclusively in their premium brands. Usually, more rice is used than corn or other cereal grains to give the beer a "crisp" taste, with there often being no hint of corn found in the flavor of standard light lagers. Cluster hops are used for bittering; Cascade and Willamette, and sometimes Sazz or Hallertauer hops, are used for aroma. The hopping rates are often higher than for standard brands.
