Mild AlesTasting NotesMild, originally a London style, is quite common in the Midlands, where it is still identified as something of a regional favorite. Mild always applies to draft ales. Mild ale is lower in alcohol than its relatives and not particularly robust, but it is flavorful and light- to medium-bodied. IngredientsIngredients used in brewing mild ales include pale ale malt as the base malt, or mild malt (if available), followed by crystal (7-12%), black patent, and chocolate malts. The grist for dark milds typically includes a small amount of black patent or chocolate malt for color more than for flavor development. Brewing TechniquesThe traditional mashing method is single-infusion at temperatures high enough to produce a highly dextrinous mash for enhanced body and mouthfeel. A single hop addition is usually done at the beginning of the boil. Some brewers still use open fermenters in brewing this style.
