EisbocksTasting NotesThe strongest of the bocks, eisbock is created by freezing the beer and removing some of the ice. This has the result of concentrating the beer, thereby making it heavier, more alcoholic, and sweeter-tasting. The beer is very full-bodied, is amber to black in color, and has low bitterness, with fruity and ale-like flavors. Brewing TechniquesEKU "28" is made entirely from pale malt and is lagered for 9 months at temperatures between -2 and 0ºC. Bayrisch G'frorns, another commercial brand, is made from 5 malts, with 3 additions of Brewers Gold, Hersbrucker, and Tettnanger hops. After fermentation between 8 and 9 days, the beer is frozen for 11 to 14 days. It is later kraeusened in the lagering tank after the ice is removed.
