ViennaTasting NotesThis style has its origins during the emergence of the Austro-Hungarian Empire, with the development of brewing in Vienna. Vienna style lager is amber-red to copper in color, with a soft maltiness of aroma and palate. It should have a dry finish, with a little sweetness on the palate. This beer is light- to medium-bodied, with low to medium bitterness and a very mild hop flavor and aroma. IngredientsA clean and neutral yeast strain is preferred. A variety of water supplies can be used to brew Vienna-style beers, but the water cannot have a high sulfate content. Carbonate waters are preferred since they have a neutralizing effect on the acids in the dark malts, thereby adding to the softness of the finished beer. Brewing TechniquesThe beers are lagered for 2 weeks between 1 and 2ºC, followed by an additional aging for 2 weeks at 0ºC. Some Bavarian brewers still age their beers for 6 to 8 months.
